RECIPE:
Vegetable Soup

SERVES: 4
INGREDIENTS: 100 grams of carrots, 100 grams of celery, 100 grams of
yucca, 100 grams of chayote, 100 grams of corn on the cob. (you may
replace any of the vegetables for others you like better or that are
available) parsley, salt and pepper to taste, 1 small onion, vegetable
stock (or chicken stock, whatever is available to you) 1 and 1/2 liter
of water, 2 tablespoons of olive oil.
DIRECTION: Wash and cut all the vegetables in cubes or stripes, on medium heat brown the onions
shortly in olive oil, add the vegetables, the water and the vegetable
stock and stir smoothly. Once it is boiling, reduce heat and
let it simmer until the vegetables are al dente, add salt and pepper to
taste,
sprinkle the cut parsley on top
and serve.
NOTES: You may serve this soup with fresh country style bread. |
