Rösti Hash

INGREDIENT:
400 grams potatoes, salt, 30 g butter.
DIRECTION:
Cook the potatoes in their skin in salt water and when done let them
cool off and then leave them in the refrigerator until the next day, peel
the potatoes and grate them with a coarse grater. In a non stick frying
pan heat up the butter then add the grated potatoes and salt, push the
potatoes down and into a round shape like a little cake, let it fry well
on one side then place a plate on top of the pan and turn the pan and
leave the potatoes on the plate then let it slide back into the pan to
fry the other side, salt again a bit and push down the potatoes to get
the round form again. Let it fry until brown on both sides
Optional:
You can add bacon or smoked ham cut in small cubes or stripes, as well
as gratinate the Rösti at the end with some Emmentaler Swiss Cheese. Some
folks also like a fried egg on top of that.
Note:
This dish goes well as side dish to most meat and poultry meals.
