RECIPE: Cream of
Tomato Soup

INGREDIENT:
2 large tomatoes, chopped , 1/2 cup chopped onion, 1/2 teaspoon white
sugar, salt, ground black pepper, 2 tablespoons Butter, 2 tablespoons
all-purpose flour, 2 cups cream.
DIRECTION:
Cook the
tomatoes, onions, sugar, salt and pepper on low heat. Once onions are
soft, strain. Set liquid aside. In a saucepan, melt the butter and
stir in the flour. Whisk in the cream and cook until thickened.
Slowly add the tomato sauce and heat. Serve hot. Optional: Top the soup
with a
bit of shipped cream and sprinkle some finely chopped parsley over it.
NOTES: Serve some country style bread.
