Clams In A Spicy Tomato Sauce

INGREDIENT:
500 grams of cleaned, fresh clams, 1 onion, 1 tomato, 1 spoon of olive
oil, 2 spoons of tomato paste, garlic as much or little as you
like, a bit or oregano 1/2 cup of dry white wine, tabasco as much as you
like it spicy, sal and pepper to taste.
DIRECTION:
Heat the olive oil in a pan, add the chopped (in small pieces) onion and
tomato and simmer for about 4 minutes, then add the tomato paste, the
clams oregano and pepper and heat up for 10 minutes, then add the dry
white wine and simmer for another 5 minutes, until clams open (discard
any that do not open), at last add the Tabasco and
salt to your liking. The Tabasco can be substituted by any other hot
sauce that is available where you are.
NOTES: Serve
steaming hot with some fresh country style bread and cold beer. Add a
small finger bowl with warm water with a lemon slice in it besides each
dish. (To wash the hands as these are eaten by hand.)
