Mango
Chicken Salad

INGREDIENT:
400 grams of seasoned and cooked (either steamed or grilled) boneless chicken breast,
2 mangoes cut in small cubes or slices, 200 grams of fresh spinach salad
leafs (or other small salad leafs), 3 tbsp. lemon juice, 3 tbsp.
vinegar, 1/2 cup of olive oil, salt and pepper to taste, sesame seeds
and slices of 1 medium sized avocado for garnishing.
DIRECTION:
Cut the boneless cooked chicken breast in small slices, add all
ingredients, except the avocado, in a bowl and mix them with a spoon. Spoon the mixed
mango chicken salad on the plates, sprinkle some sesame seeds on top and decorate each plate with some
avocado slices. Serve cold and
with some freshly toasted bread.
